Im having trouble thinking of really good combinations for a Wedding cake I have coming up. I told the bride I would make a few cakes for her to try. I just don't want to do the typical one filling cake. Any suggestions or websites I could get ideas for different flavors? Im thinking of at least 2 flavored buttercreams with a really good filling between. Oh yea, no nuts - allergies. (uggh!)

Pink Champagne cake with Raspberry filling
Devishly Good Chocolate Cake with Raspberry Cream filling
Pink Champagne cake with Strawberry filling
White cake with raspberry or a strawberry filling
White Cake with white chocolate mousse filling

I am doing a 4 flavored cake this coming weekend for my own reception. I too got inspiration from Ladycakes and Earlene- mine are going to be a 14" French Vanilla with Strawberry filling, 12" Devil's Food with Bavarian Creme filling, 10" carrot with cr. cheese filling and 8" lemon poppyseed with lemon pudding filling. All tiers iced in the cream cheese icing and decorated with white chocolate seashells. I am sooo excited! icon_smile.gif

YOU'RE CRAZY!!! For your own reception?!?! You go girl!!! Seriously, I give you credit to do that. On the other hand, I just got married a couple of years ago, and I know how anal I can be, so I understand your wanting to make sure everything goes perfect.
Those combos sound sooo delicious! Thank you for the suggestions. I actually tried making the champange cake last night. I used Cooks champange (do not recommend) but thats all I had... it smelled like yeast, but taste delicious! I can't wait to try them all. icon_smile.gif

Hi there!

My favoites are:
Mexican Chocoate(cinnanmon chocolate) with raspberry filling
Amaretto with either raspberry or parisian cream filling
Almond with Mocha mousse filling
Champagne with a raspberry filling.

Don't know about anyone else, but my brides always love these.

How long will your cakes sit out before they're served? I'm wondering about the cream cheese filling. I love this filling, but I always have safety concerns. How long can it sit out? Can it sit out longer as a filling vs. an icing? Thanks for your help!

i just did a neopolitan cake this week end, one layer choc, one strawberry and one vanilla with raspberry filling. it was good and looked great when it was served.

We already had the wedding in Jamaica this January, so that part is over with- this is just the reception/dance to celebrate! I am really excited to do my own- I have never done a wedding cake (just birthday, shower, graduation, etc.). I am still nervous, though, as I want it to be perfect.

lsawyer:
I am up in the air, as I have read many different things about cream cheese icing. I was going to leave them out overnight after decorating on Friday, but now just to be safe, I will put them in the fridge Friday night, and set them up at the reception around 3:00 Saturday- it starts at 5:00 and the cake will be cut around 6:30-ish. I feel ok about the few hours, just shakey about the overnight thing. I don't want to make 150+ people sick!
