I used a recipe from a website. I don't want to say which one, but I will if need be.
This is the recipe...

Basic Cake Recipe

1/2 cup butter
1 cup sugar
1 tsp. Vanilla
2 eggs
1 1/4 cup flour
1 tsp baking powder


Mix butter & sugar. Add eggs & vanilla; mix well. Add flour & baking powder, mix well. Bake @ 350 approx. 25 min.



I'm going to try to attach a photo of the cupcakes.

Did they sink before or after they came out of the oven? I mean, were they sunk down when you pulled them out, or did they sink after they had cooled a bit?

oh the horror!!!! I am sorry this happened to you....I have no clue...did they seem done in the middle?? Did you open the oven door often or jiggle the pan? I am sorry I am of no help

They were sunken when I opened the oven door to get them out. I don't open the door to peek or anything. A big no no to me. I usually smell for when something is done. Weird I know. icon_confused.gif I need 21 cupcakes tomorrow for my daughter's third grade class. So, they are now getting brownies. My husband is sick, my two youngest are in bed, oldest going soon. This is "our" time togehter. So I'm not about to go to the store. I know that's bad. My third grader saw them when I pulled them out. I almost started crying. She said " It's ok Mommy. We like brownies." More tears. icon_cry.gif

Well.... how do they taste? That divit is screaming "filling!!" to me icon_smile.gif

Maybe a mousse or pudding type? Then swirl your icing over the top and done.

AWWWWW she is so sweet. Don't despair my dear, although I can't tell what is wrong with the recipe, I know the cupcakes would have been delicious. Let me tell you what I did when this happened to me. I took a hershey kiss and some frosting and made surprise cakes icon_biggrin.gif

Dang that's not a lot of flour for that recipe

I wonder if that's why it flopped n fell because there wasn't enough "stuff" to hold em together?????
Hmmm, next time you try the recipe try putting in two cups of flour instead of the 1.5 cups and see how that works. Could also be an altitude thingee

Did you sift the flour? I've found with cupcakes if I don't sift the flour, they sink like that. Or, if the cups are too full - I get the spillage, and then the sinking.

Your daughter is so sweet! I would agree with others - if they taste okay, just put some icing and candy on top - they will never know the difference!

How old is your baking powder? It looks like it did not activate for some reason. I am so sorry this happened the night before sending them to school. I think we have all been there. You are a good Mom for making them in the first place. Kids love brownies as well.

Maybe your baking powder has gone bad and so they did not rise like they should.

I thought about doing a filling and stuff. The cupcakes are nothing really. I opened one up & it was airy. I'm just going to do brownies & leave it at that.

Thank you everyone for all of your information & support.
My baking powder is on;y about 1-2 months old.
I think I just had a bad night in the kitchen. I just finished picking up a 2 lb box of Angel hair pasta that I knocked out of the cabinet when I was looking for a mix. icon_cry.gificon_cry.gificon_cry.gificon_cry.gif
Now my poor sick hubby came down & asked if I was mad at him. I need a vacation!!!!!!!
