Need Recipe For Cream Cheese

Does anyone use a Cream Cheese Filling for their cakes? I have a cake this weekend and the customer requested cream cheese filling.

Here is a recipe that was posted on this site several months ago. It was posted by someone who works at Costco and it is their cream cheese filling recipe:

1 Pkg Jello French Vanilla Pudding

1 Envelope of Dream Whip

1 1/2 cups of light cream

4 ounces of Cream Cheese, softened

2 tsp pure vanilla

1 tsp Knox unflavored gelatin

1/4 cup cold water

Instructions:

Pour powdered pudding and powdered Dream Whip into a medium bowl and add the light cream, blend on low speed with mixer until well blended. Switch to high speed and beat 6 minutes, scraping the side occasionally with a spatula. Add softened cream cheese and vanilla and beat another minute. Pour 1/4 cup water into small saucepan and sprinkle gelatin over it. Stir and let stand for one minute. Heat gelatin mixture over medium heat until gelatin dissolves anad mixture thins and turns clear. DO NOT ALLOW TO BOIL. Remove pan from heat and set aside for a few minutes and allow mixture to cool off a bit. Don't let it sit too long---it will begin to gel after 10 minutes. Pour gelatin mixture into pudding mixture and beat thoroughly, scraping down sides of the bowl, for one minute. Cover tightly and refrigerate for 3 hours. When ready to fill cake, remix until nice and creamy. If too thick, add a little bit of light cream until desired consistancy is achieved. TIPS: recipe can be doubled--use a large bowl. Flavors develop when sitting overnight.

Yes, I use the crusting cream cheese recipe posted by edencakes. It is really good. I also tried a really good cream cheese icing in the Cake Mix Doctor book for a White Chocolate Cream Cheese Icing. It was really good.

Thany you so much for the reciept and advice. My family says they can die happy now. I am in love with the reciept. Everyone gets carrot cake for B-days now! Cake fell apart but tastes so goood!
