I made a practice cake to give the IMBC I made a try.. It was AWESOME to work with.. a little harder to decorate with than powdered sugar BC but it worked great once I got the hang of it. It's not the best cake by far, but the sides came out nice. The top was just to have fun and try stuff with the IMBC..

Christi.. I really like the taste of the IMBC and most of all it has a great mouth feel.. silky and light, and that's not expected because there's so much butter in it, and not gritty or greasy. I did have to put it down a few times and put it in the fridge to cool down as I seem to have volcano hands.. icon_lol.gif but other than that it was great to decorate with. My cat loved it too.. she licked it right off the cake the first time I iced it.. icon_mad.gif (No worries.. this cake is just for us) and I had to scrap most of the icing from the first attempt.

Yes, I have a cat that loves IMBC too icon_surprised.gif I love IMBC.....it's so yummy!

I agree that you do have to put it into the fridge to let it cool down every once in a while but it's worth it icon_lol.gif

IMBC....this is that italian meringue BC that is supposed to be less sweet than the regular BC, right?
Did you like the taste better than BC? How would you rate it on a scale of one to ten? Ten being the best ever?

IMBC & SMBC are the most awesome tasting BC. I love them both. You did a lovely job on your cake.

On a scale of 1 - 10 I'd give it an 8. It's very good and not too sweet. It's buttery, but it *is* buttercream afterall.. LOL. It's the texture that is SO far above powdered sugar buttercream. If you have never tried it I would give it a whirl.
