Just like karateka said, I also use a 12 x 18 pan for 1/2 a sheet.
It depends on how many serving the customer wants. Many cake boards out there holds a 12x18 very near the edge of them. Where as the 11x15 is the size that most bakeries use for thier half sheets and tell customers that it is 12x18. Cause they use lots of icing on the cakes and the size comes close to 12x18.
After putting together two 9x13 (1/4 sheets), it measured to 12x18 so I assumed that's a 1/2 sheet. I call an 11x15 a 1/3 sheet but I price them per servings. Hope that helps.
1/4 = 9" x 13"
1/3 = 11" x 15"
1/2 = 12" x 18"
Full = 18" x 24"
These are the most common standards I have found. Not saying this is set in stone, only that it is the MOST common! HTH!!!
