I know that this is last minute, but does anyone have any ideas for cute Easter cupcakes? I dont want to do anything with shredded coconut. Thanks for any ideas!
An assortment of different easter designs would be nice. In addition to what tayakaleb suggested, what about piping grass and put jelly beans on top. Click on link to see picture.

Here's a few I found. I know you said no coconut, but you could easily replace the coconut grass in the pic with green icing. Also, I found the bunny and chic cupcakes at www.brightideas.com, if you want instructions they're there. Have fun!

I am making cupcakes without the papers, then flipping them upside down on a cute little easter plate and frosting them with yellow buttercream. I am cutting mini jelly beans in half for the eyes, cutting sugared orange slices for the beak, and cutting nilla wafers in half and frosting around the edges and dipping them in yellow sugar crystals for the wings. I thought of adding fruit roll up cut outs for the head and neck jiggly-things (I don't know what they're called!)
...You could do the same with a Bunny, but with white buttercream and marshmallow/pink sugar ears and mini-mallow cheeks & tail. Or even a lamb with tons of mini-mallows and a cute oreo face on top??? I LOVE cupcakes!!! They are my favorite!!!
