Fencing? For Castle Cake ?

I am planning on making my first castle cake soon. It will be covered in BC.

I have Wilton Fondant that I want to use to make the 'fence' that would go around the edge of the cake.

I've never worked with fondant so my question is how much ahead of time can I make the 'fence' (cut it out) so that it will still be flexible enough to bend/shape around the edge of the cake? I obviously don't want it to dry out and crack when I am trying to place it.

How about making it in 3"or bigger/smaller sections (depending how big the cake is) and then placing them around the cake when they're dry.

I'd like to make bigger sections (all one piece if possible)...is that possible (8" and 6" round cakes) so that there are no/miminal seams.

Anyone else???
