How To Fill Candy Molds??

Okay, I am doing the simplest golf ball candy molds and golf ball lollipops.

Tell me: What method do you find easiest to fill molds? I tried parchment...it squeezes out the top...ziplock baggies...too hard to control....squeeze bottles....too messy!!!

Also, what do you do about those *&^%$ air bubbles that always end up in my molds?!!

Use plastic decorating bags. The easiest way to fill them is to plop the bag in a tall glass and fold the top of the bag down around the rim of the glass. Don't cut the tip of the bag until you have filled it about 3/4 of the way full and twisted a twist tie above the fill. Spray your molds with nonstick spray, and after filling them, tap them lightly on the counter to remove all the air bubbles.

Do you mean the throw-away plastic deco bags?? I don't have any of those right now icon_cry.gif I do the tapping on the counter thing when I'm done but I still have the air bubbles. thumbsdown.gif

If you don't have those, the next best thing are the sandwich bags, the plastic ones. Just twist tie the top of them so the chocolate doesn't come out the top, and make sure the chocolate is very melted so it's easy to pipe out. If there are alot of air bubbles, try re-melting the chocolate and giving it a gentle stir with a spatula. Just make sure the chocolate doesn't get too hot. I recommend the microwave at 20% power for 30 seconds. Also, after you put the chocolate in the bag, make sure there is no air in the bag before you twist tie it off, and maybe massage it a little (show it some love icon_lol.gif ) to make sure there are no bubbles. When you are filling the molds, after the first squeeze or so, just lightly touch the tip of the bag to the chocolate to finish filling, that should cut down a little on the air too.

I have always just used a spoon to fill my candy molds, and tap tap tap on the counter.

uh oh, I didn't spray the molds...could that be one of my problems?? although I have never sprayed them in the past and they came out fine.

As long as the candy is really hardened, you should be able to push them out alright without spraying.
