Most recently I bake a 10X3 inch round cake and it did not rise in the center. I thought I might could have salvaged it until I sliced it to icing. It was not done in the center. So, I trashed it and baked another one. This one also sanked in the center, but was done... I baked it 1hr 1/2...
I increased my oven temp with the second to 375. I have an old gas stove which may be my problem. Time for a new one.
I have a very large wedding cake to do in May and if I don't get a new stove by then, any suggestions on the sinking center????

I CAN SO RELATE!!!!!! i was going thru the exact same thing... not done in the center, turning my cake out and it blowing apart... problem after problem. I called an appliance repair man and my oven was running anywhere from 275 to 450 when set at 350. Cheaper to buy a new oven that to replace a thermostat. get a cheap oven thermometer and see if that is it. If you can't afford a new stove right now consider putting a flower nail in the middle so it heats at the same time as the outside. Also, have you tried bake even strips? they slow down the outside baking so the middle can keep up.
