What about some baked mac & cheese made in the oven along with? Or maybe some red skinned potatoes, mashed with a little garlic and white cheddar? How about some really good greens? Cornbread? Salad?

Now I'm seriously craving stuffed peppers!

probably too late to answer now, but I would do a veggie as a side, like steamed asparagus with a holidaise sauce or salad. Mushrooms and veggies that are scewered and marinated in a balsamic vinaigerete and then grilled would taste good with this I think too.

my mouth is watering!!! sounds deeeeelish!

its funny, whenever i make stuffed peppers, thats the meal. i figure you've got the meat, the carb and the veggies all in one!

sometimes we'll have a small salad with it but thats about it.

If you serve Mac And Cheese or potatos you have two different types of starch going on there with the rice in the peppers. Maybe a green salad and some french bread, still another starch. I always ask myself the same question when I make cabbage rolls because the filling is similar to stuffed peppers.

Just like many people have mentioned already, I always make either garlic mashed or roasted red skins to go with them. Didn't think about the starch already being there with the rice...oops! Plus maybe a salad.

LOL - try making them with red, orange, or yellow bell peppers instead. They're much sweeter and don't have that bitter flavor to them. FamilyFun has a good recipe that my kids like. I rarely make them as I think they're just too much work. But, my kids will eat raw bell peppers and because they're so good for you I don't mind paying the horrible prices for them!

I love to make them and freeze them in the summer when we grow them..how else do you use up all those little boogers that your DH just has to grow? lol
