I tried to make a chocolate collar for a small cake
I melted bakers semisweet and poured it onto a slick type of decorative paper so it would peel off easily. I also marbled in some white wiltons candy melts. after it dried I thought it would break so I warmed it a bit but now its back to the original state! messy!
What should I have done?

After the chocolate is spread on the collar, it is suppose to be applied to the side of the cake asap. Then peeld off when set. Why did you wait for it to dry ? before wanting it to put on the cake ? that's my understanding that that's what happened.. It really does not look bad.. It think it came out fine. ![]()
you dont want it to freeze/firm to the point that it becomes brittle, just set enough to where it is not a runny mess when you try to lift to apply to the cake. if it gets too firm, do what you did again - warm it, then wait until it sets to be firm enough to move but not run, then apply it to your cake. then allow it to firm completley (in fridge ) then you can peel off the acetate.
