I'm about to do Colette's "Floral Stained Glass" style cake from her wedding cakes book, and noticed that she says to use liquid food coloring. Is this required, or will Wilton paste colors work? I want the gel to remain clear, not opaque. Have never used gel before and expected it to be idiot -proof!

You can use paste to color piping gel and it will still be clear. I did this pool water pretty dark with paste color and the lines at the bottom of the pool are clearly visible through it.

I've used all different kinds of coloring to tint piping gel (except powdered) and they have all worked just fine.
