BC Dream stays good for at least 2 weeks in the fridge. You could do either way with the cakes. If you are pressed for time, just bake and freeze now.

Sure - you can make the icing today and it will be fine for Saturday.

Also - baking is up to you. I prefer to freeze early in the week (or even more ahead of time), and then decorate Friday evening for cakes that are needed for Saturday. I like to get as much done ahead of time as possible. icon_smile.gif

You can definitely make the buttercream dream ahead of time. I do it all the time. You might wish to keep it in the refrigerator, then re-beat it before using it.

I don't freeze my cakes, but from what I've read here on CC, there's no problem with doing it, as long as you wrap them tightly (you should also be sure to put them on a flat surface, to avoid any warping). If you have the time, I would bake on Friday night. JMO.
