Chocolate Mmf - Help!!!!!

Okay so I've been experimenting with MMF all day. I made the regular MMF and it came out okay. So I moved on to the chocolate MMF - got the recipe off this site. The first set was to add 3 1/2 cups PS & 1/2 cup cocoa to a bowl and then pour the melted marshmallows into the PS/cocoa. I mixed it and it was already so dry and I had 3 1/2 cups of PS left to add according to the recipe. I added one cup and it was so dry. I added some water and then took it out to kneed it but it kept cracking so I figured it was too dry. I kneeded in some crisco and that helped a little, but then I put it back in the bowl and mixed it again adding warm water. I THINK it's okay now but not sure. i took a picture of it. Can anyone tell me if this is what it's suppose to look like? it's still cracking so I don't know if it needs more water. I've never done fondant before. HELP! icon_smile.gif

I was in the same boat as you=( I made this recipe a few days ago and it ended up like that, really dry and cracking. I make MMF all the time, so I know what it should have been like. When I made a post about how to fix it, someone mentioned that with that recipe, I prolly needed more marshmallows for it. But I was out of MMs and couldn't try to repair it. I want to make it again, but I will use the other recipe I found for it that uses only 1 oz of melted chocolate and 1 tbs cocoa. They had mentioned it was too much chocolate and that was the problem. Sorry I am not much help, just wanted to let you know you are not alone on that one! Jen

should I scratch this recipe then you think? i have more marshmallows so I could melt more. I have it wrapped in crisco coated saran wrap.

the two times i made mmf (not chocolate), i didn't use the amount of ps it said to use in the recipe. i just added enough until it looked right. you could try to add more marshmallows, but maybe you can put it into the microwave for a few seconds to soften it up and then knead it?

I made that recipe too and it was dry also. I added more water, actually quite a bit more water, and it still cracked when I rolled it out. Kneading in more shortening helped a bit. I also found it a lot stiffer than the MMF , so I agree that perhaps more marshmallows might do the trick.

I had a hard time making chocolate mmf too. I just added the cocoa very slowly and stopped when it was getting dry and stuck it in the microwave for about 20 seconds and kneaded it. It was still dry after I got it on the cake but I tried to smooth it out with crisco on my hand and covered up whatever wouldn't smooth.

I wouldnt be adding water, just crisco.....

Next time I make this again(cause it sounds yummy) I will be sticking with adding 1 oz melted chocolate and 1 Tbs cocoa to the fondant. All you do is add the melted chocolate to the melted marshmallos and combine. Then add in the 1 Tbs cocoa with the powdered sugar. I bet this will taste super yummy. Ohh and I scratched mine=( Jen
