Can anyone point me into the right direction for finding cake recipes w/ NO wheat or gluten?

I have made my usual scratch white using only rice flour. The batter is thinner than normal but bakes nicely and doesn't taste bad - different, but not bad at all. Because of the lack of gluten for structure, I only bake them 1" high and just stack em all together later - the 2" one I did was more dense at the bottom middle. Another thing you have to watch out for containing gluten is extracts (the alcohol can come from wheat). I get my vanilla from Costco and it says gluten free on the bottle.

Sounds like you have a guest that has celiac? Just google that illness and it gives you a variety of suggestions.
I just have allergies to some of the things you requested for this cake in another thread.
Good luck baking.
by the way chocolate has a dairy fat in it only if you are using a cheaper chocolate, powdered chocolate has no dairy in it since it has not been sweetened for consumption.
