How long do you cool a cake in the pan?

Regular size cakes, 10 minutes. Larger cakes 15 minutes.

I've left them in a pan overnight and just covered the top and they were fine. I've also dumped them out quick when I needed to make the next layer in that pan and it was fine except don't try to move it until it has cooled further. Also don't put the hot cake onto a coated/waxed cake board or it will melt the wax, learned that one the hard way!!! icon_biggrin.gif
