Some of the info was basic, but I did learn a few things! And the buttercream they use in class is different then the Wilton recipe in their books or online - they use meringue in the buttercream. And the instructor used a method similar to the Viva method, but with a parchment triangle instead. I bought a few more things ( icon_redface.gif ) and I can't wait to get started!
One thing I didn't think I wanted was the cake leveler. I thought my serrated knife worked just fine. Then I saw the instructor use it, and I thought, "I MUST have one!" I will be making the rainbow cake for next week, because I have no character pans (yet).
Those of you who have taken the Wilton courses, did you find that there are people in the course that talk over the instructor, and keep saying, "What I like to do instead...."? We had one lady like this, and I thought, "Why are you here if you are such a know it all already?" icon_razz.gif
Even so, I cannot wait to get started on the decorating!

Glad you had fun your first night of course 1. I am an instructor and there are alot of times when I get a student just like the one you described. If your instructor is good - and I'm sure she is - she'll handle that person properly. I am never rude but I do tell "the class" that I am here to teach the "Wilton Method" and that any help IS appreciated but for the first timers - it's best if we focus on one method so as not to confuse them any more. There is alot of unfamiliar information being given to them and adding "additional" techniques at this time is only more confusing. That usually quiets the Miss Know It All down... icon_lol.gif Have fun with the class. Course 1 is a very busy course with having to make a cake each week along with all that icing. Course 2 is much better. Only one cake to make and that's for your final class when you add all the cool flowers you made the first 3 classes. Enjoy and don't let Miss Know-it-all ruin your fun. thumbs_up.gif
