Mmf ...texture Not Smooth ...why????

I'm a big fan of mmf because of the low cost of making it and the taste ... however, I have found that I can't seem to get it totaly smooth and looking like porcelain like the wilton fondant .... today I made a cake.... the fondant seemed to have little craters and tiny air bubbles... I hope that description is accurate enough for somene to be able to help me figure this out. by the way .. I live in Miami which is humidity capital of the world ... I've wondered if that may have something to do with it

Maybe the marshmallows are not melted enough when you add the powdered sugar??? Or maybe you shold knead it for longer???

I had to knead mine ALOT. I seperated it into smaller chunks so I could really knead it together.

I kneaded it longer than in the past but I'm going to make sure I do it even longer next time

reminds me of my son when he was born .... he had a full head of hair that stuck up in the air like that ... he had an army flat top cut at the ripe old age of 6 weeks when I couldn't stand the wild hair anylonger icon_lol.gif
