Just looking for the best way to cut and shape a cake...should I freeze it first? that seems logical....then do I just let it sit and come to room temp. before I start decorating to avoid condensation??

I always freeze my cakes before I do anything to them. It does making the cutting easier. Are you layering this cake your shaping? When I do any cake that isnt cut to shape I put parchment paper between my layers so I can fill and crumb coat while still frozen! HTH's Megan

Yes it will have 3 or 4 layers..I'm doing a barbie cake, and don't have a bowl to use, so I just thought I'd bake some rounds and shape it myself.
