Hey guys, I need some help, desperately.
I was at the doctor's office a few days ago, and one of the nurses came to me and asked if I could do a cake that was completely eggless, due to the fact that her 8 year old son is highly allergic to eggs. She said she's never been able to give him a "real" birthday cake, and his birthday is coming up the end of April.
Is there such a thing as an "eggless cake"? I'm clueless. Can anyone help with this subject? I would love to provide her son with his first real birthday cake, but I'm lost as a goose in a horse race on this one.

Here is a recipe for egg free chocolate cake I made for a client with an egg allergy. Also, Cherry Brook Kitchen sells cake mixes for all kinds of allergy issues. I have seen them sold at Target!

I use the vegan chocolate cake recipe from this site all the time - the results are really good for an egg/dairy-free cake - its really good with 1 cup of raspberries added to the batter!
I used the allrecipes.com eggless chocolate cake mentioned above and it was really good! I also found out that you can substitute vinegar in place of eggs for most baking recipes...especially cakes. I dont' remember the ration but you might google it and find the same info I did. I was really suprised that it actually works!
