I have a question. The recipe says DO NOT REFRIGERATE. What will happen to it if I do?...Is it okay to refrigerate the frosted cake once it's done? I'm going to be using the cookies and cream filling which need refrigeration......thanks!

The only problem you will have is the icing will probably get real hard, but if you take out of the fridge a few hours before serving, it should soften but the filling will remain cool.

I put mine in the fridge and had no problem after it came to room temp. 15 min to 20 min.
