When To Defrost And Frost A Cake?

Hi-

I have two cakes in the freezer now, and need them frosted for my son's party Saturday at 1:00. I'm wondering when should I defrost and frost them? And also, once frosted, where/how should I store it?

The cake will be a 16" square cake with an Elmo cake on top of it. The frosting is BC made with butter, cream, conf. sugar and vanilla.

I'm thinking that if I defrost and frost it Friday and then put it into the fridge it will dry out the cake, since it's already been in the freezer?

Any suggestions? Your help is appreciated - thanks so much icon_smile.gif

I always freeze my cakes, defrost them the day before and frost them the day before and put them in the refriderator and they do not dry out at all.
