Thank you for taking the time to answer my question!

I'm doing a FBCT and was wondering if it was okay to use a star tip for this #18 perhaps? I don't have a very steady hand yet, and I find it easier to pipe with star tips 'cause you're not doing continuous piping...that make sense? Thank you!

It would be hard to do an FBCT with a star tip because the line/edge you'll create would be really rough (depending on the picture that you're making). If you have a hard time doing a continuous line, you can do a few inches at a time. Just take a little break when your hand gets tired and continue where you stopped. Once the FCBT is done, you won't be able to tell if/where you stopped. That's the magic of FBCT, you can re-do the parts/lines that you don't like-- just wipe it off and do it again.
