Hello fellow cake bakers! I am making a big wedding cake for a wedding that I'm in and therefore things are going to be a bit busy. The cake is carrot with cream cheese frosting covered with Satin Ice fondant. Can I make each layer (put in filling, ice and cover with fondant) and then freeze the cake? If I can't freeze the fondant, what about just the cake iced with cream cheese icing? How much thawing would this require before I could add fondant? Thanks for any help you guys can give me!!!!!!!!

I am relatively new at this but as far as I can remember it wouldn't be a good idea because moisture and fondant don't get along too well. I'm thinking the condensation caused by defrosting will ruin the fondant.

Someone correct me if I'm wrong!
