Has anyone made Penny's SC recipe and used margarine instead of butter? Does it work? I don't have any butter in the house right now and want to make a batch if I can.

I make Penny SC exclusively and yep, I've started using margarine sticks and it works just as well so its saving me a little $$ not using butter.

Also, cookies made with margarine stays fresher longer than those made with butter.

Would someone please tell me how and where to find this recipe? I have tried the NFSC and family does not like them so would love to try these.Thanks for your help as you all always are able to help with requests from anyone.

I also found a super yummy brown sugar and spice cutout cookie recipe over the weekend and tried it out. If you love cinnamon and spice ~ these are to die for. They did puff a bit but quickly flattened out when I pulled the parchment sheet of cookies to the cooling rack. I ate 1 while it was still warm and icon_twisted.gif Ooopss 2 broke so I HAD to eat them. icon_lol.gif

Any recipe that calls for "butter" I always use margarine and I have for almost 50 years. I was the oldest of six kids during the time when households were one-income, and my mother could never afford to buy real butter. Heck, I was in my late teens before I even knew that the stuff we used wasn't "real" butter! The first time I tasted real butter was probably the last .... nasty! Tart and bitter to me!

indydebi ~ come to think of it real butter was only for special occassions in our house. Funny thing is I have always preferred eating margarine over butter on my food too thumbs_up.gif

Joshsmom, Cookies w/margarine stay fresh tasting longer because margarine in general has a longer shelf life (i.e. the date on the package) than butter. I would assume because it's mostly vegetable oil and has a high water content. Whereas butter is straight dairy.
