Help With Timing

Hi,

I'm making two half-sheet cakes for Friday. I had a few questions about the timing. When should I bake the cakes to make sure that they stay moist? I'm making a white cake from scratch. Should I bake it tomorrow (Tuesday)and then freeze, defrost on Thursday and decorate on Thursday afternoon and evening for Friday morning? I would make the IMBC on Wednesday and make 22 roses for Friday or maybe I would make the IMBC tomorrow and make some roses tomorrow and some roses on Wednesday, then freeze and place on cake on Thursday.

What do you guys think?

I would make all the decorations before Wednesday. Bake on Wednesday, make icing and decorate on Thursday. Keep boxed and refrigerated until cake is picked up on Friday. I like to bake 2 days before the cake is needed in case something happens on baking day I still have time to bake another cake if needed. I also think that the flavor and texture develops by baking the day before you decorate. HTH.
