It happened again...I have little darker purple dots and light blue dots all over my purple cake again! I hate making purple icing. What am I doing wrong...I sifted my flour! It is possible I didn't stir it enough. Wasn't there when I iced it...didn't show up until later on...found it that way this morning...course too late to do anything about it at that point! Any ideas/suggestions?!?

This has happened to me before...the only thing I can figure out is that I didn't get the color blended in enough. So, just keep mixing that color in that white icing!!!
One time I woke up to find a white spot on a blue cake! I didn't find little blue specs everywhere but there was a white spot that appeared overnight....still don't know why because it wasn't there when i went to bed...oh well!
I had a problem with polka-dotted icing before, and I was told it was the salt I was using in the icing, even though it was just a pinch of salt. If you mix the salt with the water and flavoring extracts in your icing recipe before adding the powdered sugar, it should get rid of the problem. Also, try using bottled or filtered water.
I do mix my flavoring, water and salt before adding the shortening and sugar now...did learn that trick. Guess I need to use a bigger bowl, and keep stirring!
But i do hate working with purple and blue in mass quantities for that very reason. Small amounts I can make work, but not on something like this!
I don't use salt in my icing & I have this problem sometimes. I honesty think its from the powdered sugar & shortening not blending enough when I mix it. I've gone to put frosting on a cake & was sure it was all the way mixed just to have those little white spots appear, I removed the frosting mixed it again thouroughly & it fixed it.
