Seriously Considering Pastry School---Thoughts?

I have three wonderful offers for three wonderful PHD programs. I woke up today sad at the prospect of starting school in something not related to cooking/cake decorating/pastry arts. Yet, I feel like I do not want to let down a whole world of people who expect me to become a professor (this includes me). I am so confused. All I really want to do is play with desserts and sweets all day long. Is this selling myself short? I know this is a lot to talk about but was hoping for feedback.
I am considering going to the French Pastry School in Chicago...thoughts?

There are more chefs out there who have left higher paying jobs in order to work with pastry.
I think if that is what you want go for it. But is long hours and you do stand on your feet alot. Plus, I look at it, this way, you can always go back to school to become a professor. Or teach at a culinary school. My husband went back to school, he is in his 50's never to late.
If this is one of those situations where you would wind up wondering "I wonder what would have happened if...." I think you should go for it. It sounds like it's not something you would regret doing, but might regret missing out on. If it's within your reach, why not give it a shot? You know the old saying "If you love what you do, you'll never work a day"

You can always get your PhD. I say go and do something you love right now. If the thought of not making cakes saddens you then pastry school is where you need to be at this time in your life. Don't worry about the expectations of others, it's your life to live and not theirs. I think you're torn btw what you WANT to do and what you think you SHOULD do. best of luck.
