yes, can use soup cans for towers
also can make them by rolling fondant around paper towel roll and letting harden (then can hide treats inside).
or can stack cupcakes (and dowel them!)
the main building is nothing more than a standard torted cake (and maybe two or more stacked to get extra tall castle)
lots of people use one of the pointy ice cream cones for the tower tops
I've read (don't remember where) that some have used plastic tubing of different lengths and widths. Each had been iced and then covered with fondant. The tops were also molded from fondant then attached.
To do windows you would precut out the windows, cover with fondant and then cut through the fondant.
You can do either stones, stucco look or whatever you imagine for texture & look of the castle.
