Ok, I have 2 bunny cakes that I am working on for Sunday. I started one this morning and stupid me did not put all the cake mix in, for some stupid reason, so it didn't rise correctly.
So, I went to make the next one this afternoon to start over and as I was mixing the cake I kept hearing something 'scratching' the inside of the bowl. I took a closer look at it and there are small crystals that look like undissolved sugar granules? Has anyone ever had this happen? I tried to make the other box that I had and it did the same thing. I checked the expiration date on it and found that they both are good until November 25 of this year?!
What happened? Just a couple of bad cake mixes?

I've had a similar thing happen with the DH mix. It's like little gritty pieces of hard sugar in the mix. The cakes I've made where I've seen this have come out fine. I'm not sure if it's just the cake mix settling out in the box or what. Maybe someone else has a better clue.
I would just double check it and make SURE that it's just sugar (or something cake mix related). I used to work in a jail kitchen (I was a teacher, not a 'resident'
), and we were mixing something one day in one of the giant mixers and kept hearing something scraping on the bottom. Turns out there was a light bulb above the mixing area that busted that no one knew about (it was partially hidden). So it was actually little pieces of glass mixing around. Thank GOD we caught that.

Thanks for your input! That is kind of what I thought, but I wanted to see if anyone else had experienced. I tossed the cake mixes unfortunately (now i wish I had saved them!!). I know for sure that there is nothing that could have fallen into it. It was weird that it was the 2 mixes that are the same batch # and everything. The cake I made this morning was a different lot and mixed up great!
