I have noticed that many people use a fondant gumpaste mixture to mold toppers and other things on their cakes. What is the recipe, or what is the fondant gumpaste ratio that you use?

Wilton recommends using 1/2 to 1 tsp. of Gum Tex to 12 oz fondant. Mostly I do not use all 12 oz at a time so I eyeball it. Gumpaste allows the fondant stay more pliable longer.

Kibibi,

I use a recipe given to me by a teacher here in Australi, you may like to try it :

500grams fondant
2 teaspoons cellogen
1/3 teaspoon egg white
2 teaspoons cream of tartar

You simply knead the cellogen in first, then add the egg white and knead that in followed by the cram of tartar, it makes a nice smooth paste that you can use for flowers and modeling, if you look in my gallery, you'll see my latest mermaid cake, everything on that was made using this recipe, except the fondant covering the cake.

Cheers,
Fran
