I am a newbie to CC but not to cakes.
I have been selling my pound cakes to a local coffee shop and by word of mouth for a couple of months now. I have been getting asked if I do non pound cakes as well. I have a cake recipe tha people love (yellow cake) I am trying fillings and frostings before I move on to other cake flavors
My family likes eating my cakes (it helps that I can bake LOL) but I'm wondering, when everyne trys a new filling or frosting or cake flavor, do they make a full, say 9 inch cake all the time, or smaller cakes and freze them?

I make a 6i nch. If I try something new as far as decorations go then that is where the pan upside down comes in handy especialy for the top. There are only 2 of us and like crimsicle a lot gets thrown out.
I usually make two 8-inch rounds; it gives me extra decorating practice. I'm not much of a cake eater, so I usually unload them on my students or staff where I teach, or send my husband off to work with it for his co-workers. There may be senior centers, day care centers, shelters, etc., where you can bring your cakes. If possible, ask them for their honest feedback on the taste.
my next cake will be a whole one too. I wanted to make a fruit basket cake but i only have bananas and strawberries. I also have pastry pride LOL. I like my cake room temp. I guess I need to research how to make a recipe into 6 inch rounds.
As for the 8 inches... I was thinking about extra decorating practice. I start Course 1 at Michaels tuesday. YAY!
