Need Help With Mmf....ugh

Ok I made MMF for the first time the other day and I dont think it turned out right. IT was REALLY hard to work with. It wouldn't roll out thin enough, and it had the texture of foam rubber. My DH said that it tasted good (like peeps) but it was strange to eat.
So does anyone know what I may have done wrong or have any suggestions for the cake I am gonna be doing today?

This happened to me the first time I made mmf--it was the consistency of circus peanuts! LOL After I started looking at other recipes, I realized that the one I was using was the only one I saw that didn't include shortening! If that wasn't the problem, I'd say you probably accidentally added too much corn starch or powdered sugar when you were kneading and rolling out your mmf.

It sounds like you added to much powdered sugar. I have never used all the PS called for in the recipe. it all just depends on where you live and what type of weather you are living in. You should keep adding powdered sugar until the MMF is just a tiny bit sticky. Then, stop, wrap tightly in suran wrap and let set overnight. If it is too sticky the next day, slowly add the PS until you can roll it. I like to roll mine on a Silpat greased with crisco. If it is hard at first, microwave for a few seconds to soften it. MMF just takes practice and getting to know the "feel" of what is the correct texture and what you prefer to work with.

Thank you sooooo much for the help. I am gonna try to do a camke for easter. I am totally nervous im gonna screw this up like my last one. Wish me luck.

I wouldn't roll out or knead with PS or CS. I only use shortening and I never have problems. I also use the recipe with the shortening added.

Heating the MMF up for a few seconds really helps too!

Try the MMF recipe that is on this web. (I haven't figured out how to post a link yet dunce.gif ) I tried it the first time I worked with fondant and I didn't have any problems. Well, I guess I did have one - it stuck to the roller, I just balled it back up and added a little more PS. Good luck. thumbs_up.gif
