I just got a new toy...and now I have to figure out how to use it. I need to know how to put the frosting sheet on the cake when it says "not to let it crust" but if I don't let it crust I can't smooth it with my roller or paper towel...How do I get a frosting sheet on and have a perfectly smooth cake? Help?
I get my cake as smooth as I can with my spatula then apply the image and carefully smooth the edges of the image down with my fingers to make it blend with the cake and then carefully smooth over the image with my hands. Then I let my icing crust as usual and go ever it with the Viva as normal--though I am careful around the edges of the image.
You can also ice your cake as normal, let it crust and then smooth with Viva and then lightly spritz your cake with water and then apply the image. I don;t do this very often because it is difficult to adjust the image once it is on the cake because the water really makes it stick and it will sometimes tear the image.

I get the top as smooth as possible, then I put the image on. THEN, I cover the image with the backing sheet and run over the whole thing with a fondant smoother. You can mash pretty aggressively, as long as that backing sheet is between you and the image. But, you must be careful. If you rub over the image without the protection of the backing sheet - like if you catch the edge or a tiny bit of corner - it will rip to smithereens. I've also done the same thing with a sheet of printer paper when I've applied cut-out pieces of image and don't have a complete backing sheet to use for the smoothing process. I think next time I use a whole sheet, I'm going to save the backing so I'll have one on hand for smoothing small pieces. This process helps assure complete contact between the sheet and the base icing, too. I've had far fewer air pockets to form as well.
