Anyone out there have experience with icing cheesecakes? I'm doing a 4 tiered cheesecake (stacked on top of each other) for tomorrow...no time like the present to ask this question...
I'm concerned that while the cake is on display, the cheesecake will sweat and the frosting will slide off. Anyone know how to avoid that...or if I'm worrying needlessly?
Your input will ease my worried mind (as long as you're not going to tell me I'm doomed!

I know lots of people have done it and I've never heard of anyone having problems! Go for it!
