Cake Decorators In Dfw Area (Sorry Long!)

I am faced with a dilemma. I was going to do the wedding cake for a friend in August. Here is the dilemma, she moved her wedding date to the same weekend as my daughter so I don't know if I will be able to do both since my daughter lives out of town. I could do the cake for my friend but I would have to freeze them, already decorated in BC on Wednesday, the wedding is on Sunday. First, I don't know if the cakes will still be okay for the Sunday wedding, second I need someone to keep the cakes. She is going to have someone in her family to pick them up. If they won't keep that long frozen, then I was wondering if anyone would be willing to do the cakes for me. I will supply everything needed and could even bake the cakes I would just need someone to decorate them and have them ready for Sunday. BTW the date is August 5. The design is fairly simple, iced smooth with BC, lg bead border around each layer with Cala Lillies, which is another problem as I have never done Cala Lillies. I am going to try to do them and if I can't I am going to buy them. The cake is going to be set-up on the Wilton Floating Tiers stand which I will also provide. Anyway, any suggestions or offers of help would be greatly appreciated. If you would prefer you can pm me.

Another thing I forgot, they want a cookie cake for the grooms cake cut like a guitar. It is to be Chocolate chip. Would that be okay for me to do in advance and freeze or store?

i cannot help you that weekend, but i helped a friend once do her sons wedding cake about 2weeks before the wedding, we froze the 4 tiers completely decorated and on the day of the wedding i picked them up early in the morning to deliver them over an hr away, where i stacked and arranged them, they ate the cake around 6pm, it was still chilled in the middle but tasted great. i think it will be fine if you have to freeze it, finding space may be the problem though.

Thanks for offering to help. I do appreciate it. Does anyone have any suggestions for the Chocolate Chip cookie for the grooms cake? I have never done anything carved before. Can I make it in advance and will it be okay?
