Hello,

I've been on cake central for awhile but this is my first post. I am decorating a 3 tiered cake for tomorrow morning and I am not happy with the top tier so I am going to bake it again tonight when I get home from work. Any tips on how I can cool the cake quikly so that I can decorate it with fondant at the most 2 hours after it comes out of the oven?

Also do you think it matters if there are crumbs in the icing under the fondant? I think I'm putting too much icing on but less whould mean crumbs...

Thanks!

No, ti does not matter if there are crumbs in the icing under the Fondant. In fact, many people just put a thin coating, or a crumb coat, of icing on the cake before putting on the fondant.
As for cooling you cake quickly, wrap it in suran wrap when it comes out of the oven and put it in the freezer, this will do the trick!
