How do you do your cakes that have filling that needs to be refrigerated but are covered in fondant? Do you have to do all the decorating the day the cake goes out?

Fondant is fine to put in the fridge. In fact I covered a cake with fondant put the whole thing in my freezer and then put it into the fridge for 1 day to thaw so that I can decorate it. It tastes just fine!!!!!

I refrigetate my fondant covered cakes also.

Ive also refidgerated many cakes with fondant accents.... they are just fine.
