Have an order for black forest cake. I found a recipe for the cake that I'm happy with, however, I'm not sure what to use for the filling. Thank you for your suggestions and help.

hmmm........I'm not too sure what black forest cake is exactly, other than that its DELICIOUS! But I think its chocolate, and I use this chocolate ganache recipe for my filling:

This is my personal favorite cake, but I haven't made one for anyone. . .and since I'm the only one at my house that likes it, I only get it elsewhere.
So, I don't know if this helps, but I've always seen them filled with either a whipped/stabilized cream, or cherry pie filling, like what would go on the top. But I think the ganache would be yummy too.

A black forest cake is chocolate cake, cherry filling and iced with whipped cream.

So for a filling I would use cherry pie filling.

ok, well here's my other problem. If you look in my gallery, you will see a white picnic basket with strawberries in it. It was done in buttercream. I've never used stabilized whipped cream and quite frankly, I'm afraid of it as it melts alot easier. This person wants the black forest cake to look exactly like my picture with a couple of adjustments. we are in Fl. and he will be driving for a couple of hours with it. Am I going to end up with a mess of goop with whipped cream or pie filling? I'm still going to dec. w/ bc.
Thanks, I have to make this today. I'm so uncomfortable about this cake that I was thinking of going to the store to see if they would sell me some sort of filling from their bakery.

You can use whipped cream and marschino (sp?) cherries. Drain the cherries, cut them in half, put a layer of whipped cream, a layer of cherries, and another layer of whipped cream. If he truly wants black forest cake, you have to do the basketweave in whipped cream, otherwise the cake isn't going to taste very good. Stabalized whipped cream works fine with basketweave. You just have to work quickly. Tell your customer to bring a large cooler, or provide a large moving box to put the cake in. You can pack it in with cold packs or dry ice, and keep it cool. The 2 hour drive should be just fine. Give him what he wants, and just inform him of the possibilities of what can go wrong. Let him change his mind, don't make that choice for him.

One more quest. Since the recipe for the cake calls for a can of cherry pie filling stirred into the mix, Should I still use it for a filling too?
