How Far In Advance Can I Make Fondant Decorations?

I want to make a fondant plaque for a cake that has quite a bit of detail. I'd like to get started now while I have time even though I don't need it for about 3 weeks.

It's going to sit flat on the cake. Think 3 weeks is too far in advance to make it if I keep it covered with saran wrap until I need it?

I don't want it to be rock hard or stale, but I really would love to make it while I have time.

What do you think? 3 weeks too long?

I try to make all of my fondant pieces in advance - but this is not just for time but because I want them to dry (I just use them for deco - my nephew will gladly eat the fondant, but his Mom doesn't want him having that much sugar!).

If you keep it well wrapped it would probably not harden up. I'd wrap it in several layers of plastic wrap and then put it in a zip top bag for good measure.

I make all my stuff well in advance also. If you mix 50/50 gumpaste/fondant it will dry faster then just cover with wrap and it shoud be just fine. The stuff will last indefinetley.

Fondant is going to dry rock hard but it will be extremely fragile. And I am sure you know that by adding 50% gumpaste it will strengthen the plaque considerably. You can always remove the plaque before cutting and many people like the little keepsakes.

I would make in advance. Three weeks is nothing in my world. But that is just me though. I have "HUGE" pieces drying for a over a month now. They will be in a sculpture at the end of this month. And I am starting one this month for a June art show.

But remember: food color is not lightfast and in my book purple/violet is the worst for fading. Keeping it in a dark area may help it from fading to quickly.
