Life Of Buttercream Icing

How long do you keep your buttercream to use? I get so frustrated making BC icing and have it go to waste. Can I freeze the leftovers and pull out when I need it?

Yes you can freez it I think the time fram is 6 mo. maybe someone else will have more input!!!

BC freezes really well thumbs_up.gif Just be sure to store it wrapped well/airtight or it'll taste freezer burnt. You can also keep BC at room temp for a while and refrigerated for even longer. I've kept it room temp, well covered for up to 2 months. Longer than that and it seems to taste like old candy icon_razz.gif I've kept BC in the fridge for several months.

That's great to hear...I don't know why I seem to remember hearing that it shouldn't be used after 2 weeks. I have the icing left in the bags, and put them in ziploc bags and into the fridge, but sometimes it several weeks before I can reuse them again, and then they have a different consistency. I think I would be smarter to squeeze out into a container, wrap it up tight and freeze, when I need it, take it out and quick beat it and reload a new icing bag. I think I'll try that next time around. Probably will toss this batch of icing I have in fridge now, but glad to hear it freezes well! This site is so good for bouncing stuff off one another!
