I have 2 cakes that I need to make for sunday. I have to work friday and saturday night so they need to be done by friday afternoon. would it be ok if I made the cakes on thursday and then decorate them on friday. should I put them in the fridge? also if I make the buttercream icing thursday should I put it in the fridge or let it sit out?

I would bake your cakes and let them cool. Place them in the fridge for a half hour and then crumb coat them with your buttercream. Friday morning you could finish them up. I hate time crunches like that but you can do it. Let us know how it works out.

I always bake ahead and wrap in seran wrap, up to 4 days before the cakes will be eaten. Then I ice and decorate the day before. I always put my finished cake in the fridge.

I would bake my cakes on Thursday and cool them, then wrap them in plastic wrap and place them in the fridge. Make sure to wrap them up it will keep them moist and prevent them from tasting like fridge. While the cakes are cooking I would make the frosting/fillings/make ahead decorations. Friday I would ice and decorate. This time line wont work for a super complex cake though

I've been starting to bake all my weekend cakes on Wednesday...then I wrap and either fridge or freeze depending on when I need them and if its going to be carved or not... and then I can take them out and crumb coat when I have time, and then decorate when I have time closer to the pickup dates.

Thanks everyone. I made both cakes and all the frosting yesterday. I also made the fondant bow for my present cake. And I will decorate them today.
