What Is Going On With My Nfsc?

The last two times I've made them, they've spread terribly. I haven't changed my process at all so I have no idea what it could be, here's my routine:

Make cookies and roll out between parchment paper placing each sheet in the freezer once I roll it out. Once all the dough is rolled out, I take the first batch out of the freezer and cut out cookies, insert sticks, put it back in the freezer. I move on to the next batch and put it in the refrigerator, I do the next batch, move the cookies from the freezer to the oven, move the cookies from the fridge to the freezer and place new batch in the fridge. I continue like this until all the cookies are baked, I always bake on a cookie sheet that comes right out of the freezer. I hope all that made sense, if this keeps up, I'm going to have to start using a new recipe. I've attached a picture of what the cookies look like, I'm contemplating starting over because I don't know if I can give this to my customers. Anybody have any thoughts on what I could be doing wrong?

I don't see what the problem is. The cookies look fine to me. icon_smile.gif

I also don't see the problem. They look cute to me. I wouldn't start over. Jodie

I do see some spreading but nothing that I would worry over. They look great! icon_biggrin.gif And I love your idea of using jellybeans.

Did you switch any of your ingredients? It could be that.

I honestly think they look great. I don't have any spreading and I do not refreeze them after I cut them out. Do you think that your oven is changing a bit or is there more humidity since the weather has changed and gotten warmer?

They look cute!! DO NOT start over! Next time put in less baking powder and see if that makes a difference...

Hmmm, it has been humid lately, but not today. DH said not to start over either so I won't, but there is lot's of spreading. I cut the basket shape out with the same cookie cutter I used to cut out the egg. You can see that they spread alot from that shape. I didn't use any different ingredients, next time I'll try using next baking soda next time.

Yes, less soda next time, maybe halve it and see what happens. They are really cute.

Personally, I think your cookies look great! If they were any smaller they'd be the same size as the cut out that covers them. You are doing great!

I get a little spreading even with chilling them before popping in the oven. I think that's normal and nothing you can do anything about. It doesn't look like a lot of spreading from your photo though, just a little bit, but I still think they look fine.

My husband came up an idea on how to make the fondant lay evenly on a cookie that spread. First, you cut out the fondant by using the same cookie cutter. Before placing fondant on your cookie, be sure to brush the cookie with a little bit of corn syrup. This way the fondant will stick.

After you place the fondant on the cookie, you can use your little rolling pin to spread out more further. That's it.
