I need to make a cake for this saturday and I would like to put real fruit between each layer. Can I do this the night before or is that too long for the fruit to be sitting there?

Also, what else do you put between the layers besides the fruit?

I like whipped cream and a layer of fruit. Another thing that is really good is to add some pureed fresh fruit to some whipped cream. Yum.

If you make a fruit filling there should be no problem. Put it in the fridge and everything should be fine. If you want to put fresh fruit on top I wouldn't do this too far in advance.

I think you should be fine if you refrigerate the cake. My favorite combinations in the past:

1.) Strawberries with real whipped cream
2.) raspberries and blueberries with cream cheese frosting
3.) blueberries with a layer of lemon curd and buttercream

oh I could go on!

Blueberries w/ lemon curd and buttercream - sounds amazing! I'll definately give that a try!
