Hello I have a few questions.
fondant preference: MMF or satin ice
What is the best way to color fondant

Also I was wondering how you get the layers on a stacked cake to look so tall. Do you bake a lot of pans of cake or do you torte with a thick filling

I am planning on making a two tiered cake with the top and bottom laer being different shapes/sizes and covering in fondant. Thanks

to make mine look taller I usually use a little more batter than what it calls for the pan OR I torte and fill each layer

to colour my MMF... I add the colour to the melted marshmallows/liquid. If it's not dark enough you can knead some more colour in later.

If you're kneading a dark color in, be sure to wear gloves, or you will have some lovely stains on your hands for days to come. icon_smile.gif

Whether I use MMF or Satin Ice depends on what I am making. MMF taste pretty good and is extremely inexpensive! I figure if most people are going to toss it anyway, why bother spending the money. For wedding or special occasion cakes I use Satin Ice. But since I started getting really good with working with MMF, I am starting to like it better and use it more often than not! It just depends if you want to spend the money. If you want to color a whole batch a certain color, mix in the color when you melt the marshmellows. If you want all different color then you just have to knead it in. If you want higher layers you can use a 3" pan instead of a 2" or add extra batter! Hope this helps and welcome to CC!!!

Wow adding the color to the melted marshmellows!! Seems like a simple idea but I never thought of it. I wont even tell you guys how I have been coloring my MMF!! Thanks for the info.

I actually prefer Toba Garrett's recipe over MMF but most children LOVE MMF! I am sorry I cannot say anything about satin ice because I have never tried it.
Adding color to the liquid before adding the sugar is an awesome way to color fondant!
