Ok, 1. Do I fill the cake, then freeze it?
2. How do I wrap it so it will remain fresh? I know that when you refrigerate a cake, it just doesn't seem to be as fresh as it had been. Is it the same when you freeze a cake?
3. Do I ice it when it is frozen or once it has thawed? I will be using strictly BC or cream cheese icing for all of them.

If you wrap your layers, unfilled, in plastic wrap and then pop them in the freezer, they will be just fine and really moist! I read somewhere before that if you put a cake in the fridge, they dry out because air circulates in a fridge but in a freezer, the moisture gets "locked" in by freezing (or something like that).
I have not decorated then frozen. I would take your layers out, fill while frozen, then let defrost and decorate. The layers are easier to handle when frozen so it is OK to fill but some people have had problems with condensation and their icing if you try to decorate while still frozen (although some people do it with no problems so that part is up to you).

this is my advice, for when I have lots of cakes for the same day:
wrap tightly in Saran wrap while still warm, then in foil. If you can use the pan it was baked in, put in Saran, put back in pan, then wrap entire thing in foil. I wouldn't fill till you're ready to ice and decorate.
You can ice with it either frozen or thawed. However, if the cake needs to go back in the fridge (because of filling or whatever), wait till it's thawed or your BC will crack. Just my experience!!

I always freeze my cakes. I frost after I take them out of the freezer. I freeze right out of the oven, given 20 minutes to cool and wrap good in saran wrap and then tin foil. I frost immediately after taking out of the freezer..
