Filling Cupcakes ?

I have 2 orders for cupcakes Sat they will each be flower so I will have 12 lemon and 12 white cupcakes left since I need to make a cake for my ds 26 I thought I would make them special I also will do some chocolate ones

How do I fill them do I just stick the tip in and squish or do I do like on emeril and cut out a plug to fill with the filling and then place the top back on???

I am going for taste on these instead of fancy decorations

What would be your favorite filling the twinky or a white chocolate mouse

I usually just use the elongated open tip, and insert it into the cupcake then squeeze the filling in. I guess it's all a matter of preference though. Either way will work.

I think the twinkie filling would be better for the lemon ones

i also use a tip. it is 230 i believe. But if you do not have it you could also you one of your bigger round tips. I do not just do it in one spot. I would poke about four holes on top while I am filling. I would think it is faster then cutting the center out and would be easier to frost because there are no exposed crumbs left from cutting.
