I found a recipe for white cake that is really simple and it tastes good, too......the only problem.....it's too dry (I think it's too dry).

here's the recipe:
1 1/2 sticks butter
1 1/2 c sugar
3 eggs plus one yolk
3/4 milk
2 c flour
2 t baking powder
1 t vanilla

what can I do to make it more moist?

after baking...many bakers will brush on a simple syrup (sugar dissolved in water)

and some will even flavor the syrup to enhance the flavor of the cake even more.

the possibilities are endless

Doug,

How do you flavor the simply syrup and how much flavoring would you use? Could a vanilla bean be used? And what is the ratio of sugar to water in a simply syrup recipe.

Equal parts sugar and water, you could very lightly infuse this w/th a vanilla bean over the stove but don't bring to a boil! Then take the bean out. You could add as much flavor as it takes to get to your liking, it doesn't mess with the sugar to water ratio.

Some bakers use a 1:1 ratio . I personally use two cups of water to one cup of sugar (2:1 ratio). You can add vanilla , almond or lemon extracts ( a tsp. or two). You can even add brandy, rum or some other liquors to suit your taste.

Here's my recipe for Brandy Syrop: (You could use any liquor)

2 cups water
1 cup sugar
1/4 cup brandy

* Boil sugar and water for 5 minutes
* Let it cool
* When you are ready to decorate your cake, you add the liquor to the sugar and water.
