I Need Help,filling Question

ok ccrs, I need your help with a few things. Really bad.
okay, for my wedding cakes, I have come up with some awesome fillings, all from here...but they are cream based....so they have to be refrigerated after I put them on the cake so they don't spoil....then my frig. is full with just one wedding cake. anyway, how would I do more then one wedding cake per weekend?
also, how early can I assembly my cake with filling and all for a sat. wedding? then, what about condinsation if I leave it in the fridge for a few days while I work on the detail work?

I appreciate your help so much.

I had the same questions...ended up buying a regular (largest for the lowest price) second fridge! Its my "cake fridge" and nobody is allowed to use it except to chill cokes or something, no leftovers or food.

You shouldn't have to worry about condensation much if its not super humid... I learned where I work, we refrigerate our stuff constantly. Makes it easier to handle and travel with.

I have a fridge that is just for cakes, but that still is full with one wedding cake, and would like to figure out how to do a second cake on the same weekend.
