I use a recipe almost identical to the Buttercream Dream and it's delicious but when I mix it up I get terrible air bubbles so I end up with cake with holes in the side. I have KA hand mixer and I beat on low and keep the beaters in the mixture as much as possible. I can't afford a stand mixer yet so I need to work with what I have. Any suggestions?

My recipe:
1 stick salted butter
1 stick unsalted butter
1 cup shortening
1 tablespoon almond extract or vanilla but I prefer almond
6 tbs. cold heavy cream and 6 tablespoons cold milk
2lb. bag of powdered sugar
2 tablespoons meringue powder

This gives me a soft medium consistence that's good for icing the cake and simple borders. It will crust a enough to Viva it but you have to be careful. It's not the best in the direct heat either but damn it tastes good!

Which paddle do you use? Don't use the whip paddle it puts a lot of air into the frosting. (Learned from experience). I use the other paddle (not the one you use to kneed)...sorry pregnant brain moment. I mix on slow and mix for a long time. I hardly get much air at all. Hope this helps!

I tap the bowl on the counter like I do a cake before baking and that seems to get a lot of air out. Also using a spatula cut into the frosting in a figure 8 motion to help get rid of the airbubbles without making more. Hope this helps.

My KA hand mixer came with one set of general beaters. I always mix on the lowest setting. I will try tapping on the counter and using the figure 8. Would it help if I mixed for a really long time?

I use the attachment that looks like a paddle. I mix for about 5-10 minutes after all the ingredients are put in. Too fast and too much mixing can increase the air bubbles.

I always cut through mine with a spatula, too. I makes it SO smooth and no bubbles. A dream to work with then.

I think mixing it for a long time would make it worse. I just mix it until everything is blended well.
